Abstract
Variability, heritability and correlations were investigated for 13 parameters characterizing bread-making quality of winter wheat. The grain material of 105 cultivars and strains from the preliminary state trials of the years 2005 and 2006 was analyzed in the Department of Cereal Crops of the Plant Breeding and Acclimatization Institute, Cracow Division. The statistical analysis, performed separately for each year, included analysis of variance and calculation of means and coefficients of variability, heritability, genotypic correlation and phenotypic correlation. The values of coefficients for both years of study were much alike. The variability coefficients ranged from 2.33% (for flour yield) to 57.3% (for dough stability). The coefficients of heritability were diverse either and varied between 0.40 (for crumb quality) and 0.94 (for sedimentation value). Generally, the coefficients of genotypic correlation proved to be higher than the corresponding ones for phenotypic correlation. The sedimentation value was significantly and positively correlated with protein content, water absorption, dough energy, bread volume, flour yield, quality number, crumb quality and gluten index. The negative correlation of the sedimentation value with softness of dough was also convenient for the selection process.
