Abstract
Rye is a species with the highest content of bioactive compounds, making it a very valuable component of our diet. Despite being the second most important cereal in terms of bread production, it remains underrated. Among commonly consumed cereals, this species contains the highest content of dietary fiber, as well as phenolic acids and alkylresorcinols. The presence of dietary fiber and accompanying bioactive substances in food brings many benefits related to health prevention. These substances have
a positive effect on lipid metabolism, carbohydrate metabolism and the proper functioning of the digestive tract. As a result, this reduces the risk of many diseases, such as atherosclerosis, obesity, and diabetes.
The aim of the research was to determine the chemical composition of the grains of six winter rye varieties. In these studies, we focused on determining the content of protein, starch, lipids, and minerals, which constitute a group of nutrients, as well as dietary fiber, alkylresorcinols, and phenolic acids, defined as bioactive components with prohealthy properties. The varieties with the highest amount of nurtients were Dańkowskie Skand and Reflektor, whereas the highest level of bioactive compounds was observed in KWS Dolaro and Poznańskie. The chemical profile of the grain of these varieties was characterized by the highest content of dietary fiber, includng water-extractable arabinoxylans and phenolic compounds. The obtained results will help indicate the use value of selected varieties of winter rye.
